Reports of Double Bay’s death as a dining destination have been greatly exaggerated. This ambitious Japanese, recently branched out from its sushi bar home base in Kingsford, is generating some encouraging life-indicating bleeps. Fitted out like the upside-down hull of a wooden boat, Niji has a real samurai swagger, as headband-wearing sushi chefs turn out deftly formed nigiri sushi of lush Hokkaido scallop topped with foie gras and perfectly plump inside-out maki rolls of salmon and avocado ‘iced’ with orange flying fish roe. Gyoza are thin-skinned, crisp-bottomed and stuffed with wagyu, while rich cubes of smoked pork belly are instant craving material. Nicely cured salmon was somewhat drowned in a pool of shiso, coriander and lemon zest, but a sweet sushi roll of coconut rice and mango registers yet another reassuring bleep for Double Bay.
